Handling
- Storage:- Arrives frozen. Store at -18°C or below. For best results, thaw in refrigerator 24-36 hrs before use. Keep between 2°C to 7°C before whipping. Never freeze unwhipped product.
- Preparation :- Use chilled bowl and wire whip. Do not freeze bowl and wire whip; loss of volume will result. Pour product into chilled bowl, covering upto 15% - 20% of the bowl.
Always refrigerate unused liquid product between uses. Whip at medium speed until topping begins to stiffen, loses its gloss and pulls from sides of bowl. Do not overwhip. Loss of stability and yield will result. For best results, store whipped product in freezer.
