Tres leches Cake

  • For the cake:
  • Flour » 470gms
  • Sugar » 236gms
  • Baking powder » 10gms
  • Salt » a pinch
  • Eggs separated » 9nos
  • Vanilla Essence » 10ml
  • Rich’s sweet mate 700gms
  • For the topping
  • Rich’s New Niagara Farms 200gms


  • Whip egg whites and ½ sugar on high speed until meringue
  • Mix egg yolks and remaining sugar in a separate mixing bowl until creamy and pale yellow
  • Add vanilla essence & slowly fold in the flour
  • Mix meringue with egg yolk mixture & bake in a cake pan at 180C for 35 to 40mins
  • Remove cake from the oven & using a fork, generously poke holes on top of the cake
  • Pour the Rich’s sweetmate on the hot cake.
  • Refrigerate for at least two hours
  • Whip Rich’s New Niagara Farms until peak consistency & spread on top the cake
  • Serve cold.
