Roasted Pumpkin Tart

  • Tart pastry 2no
  • For Roasted Pumpkin
  • Olive oil 10ml
  • Pumpkin 300gms
  • Thyme 2gms
  • For Filling
  • Rich’s Sweetmate 400gms
  • Brown Sugar 120gms
  • Flour 22gms
  • Salt 2gms
  • Ginger 2gms
  • Cinnamon 2gms
  • Nutmeg 1gms
  • Eggs 100gms


  • Marinate slices of pumpkin with olive oil & herbs & roast in the oven until cooked
  • Make puree of roasted pumpkin with the brown sugar and spices.
  • Add flour and eggs, blend to fine paste.
  • Add the Rich’s Sweetmate slowly. Do not aerate.
  • Pour mixture into tart pastry and bake at 170 degrees for 40 minutes.
  • Remove from the oven carefully & serve hot
