Pistachio Doughnut

Ingredients

  • Yeast – 50 gm
  • Milk – 150 ml
  • Bread improver – 16 gm
  • Pista Powder – 100gm
  • Flour – 900 gm
  • Sugar – 50 gm
  • Salt – 15 gm
  • Eggs – 3 no
  • Water – 400 ml
  • Butter – 135 ml
  • Silvered Pista – 50gm
  • Rich’s Better Crème – 400gm

Method

  • Pre heat oil 160 deg C
  • Mix all the ingredients except oil in the dough mixing machine.
  • Run the machine in 1stgear till the dough comes together likea ball (.approx. 2 minutes).
  • Stop and change to second gear and run the machine for 8 minutes.
  • Add the oil in a slow and steady stream, until all the oil is absorbed into the dough (approx. 10 minutes).
  • Take the dough out on the table cover and bulk prove. Knock back & roll it into 11 mm thickness & cut with a doughnut cutter. Prove until double in size.
  • Deep fry in oil until a golden brown colour.
  • Roll in castor sugar
  • Whip Rich’s Better crème & pipe rosette on top of doughnut & sprinkle silvered pista.
  • Serve cold.
