Hot Cross Buns with Better Crème Frosting

  • Flour 190gm
  • Sugar 185gm
  • Egg 1no
  • Butter 100gm
  • Egg Yolk 1no
  • For Egg wash
  • Egg 100gm
  • Salt 5gm


    Batter for Cross.

  • Cream butter & sugar in a mixing bowl, until sugar is completely dissolved.
  • For Buns.

  • Sieve Flour, salt & gluten in a mixing machine bowl .
  • Add fresh yeast, egg, sugar, candied fruits & water & make dough.
  • Once dough is prepared add butter & mix until smooth surface is formed.
  • Divide into 40gm rolls & keep inside the proving chamber for fermentation.
  • Pipe batter to make cross impression on top of the bread.
  • Make egg wash with egg & salt; apply on top of the fermented rolls.
  • Bake at 220C for 10mins & reduce temperature till 200C, further bake for another 8-9mins.
  • Remove & allow cooling down completely.
  • Divide Buns in 2 parts from centre & allow to rest for few mins or until cools down completely.
  • Whip Rich’s Better Crème & pipe rosette on base & place top crust on rosette.
  • Serve cold.
