Chocolate & Hazelnut Pots de Crème

  • Rich’s Sweet Mate 375gms
  • Hazelnut Liqueur 30ml
  • Dark Chocolate 250gms
  • Cinnamon pwd 2gms
  • Egg yolk 5nos
  • Brown Sugar 50gms
  • Rich’s New Niagara Farms 125gms
  • Hazelnut Praline
  • Sugar 70gms
  • Hazelnut 40gms


  • Cook together Rich’s Sweet Mate, cinnamon powder & Hazelnut liqueur
  • Remove from the heat & add dark chocolate, stir until mixture is smooth
  • In a separate bowl beat egg yolk & sugar until pale
  • Gradually pour hot chocolate cream in egg mixture, stir until combine
  • Strain mixture through fine sieve & divide chocolate custard evenly among the ramekin mould
  • Place ramekin moulds in deep baking pan
  • Bake for 30mins using waterbath
  • Remove from the oven & allow to cool for 1hour
  • Refrigerate for at-least 1hr
  • For Hazelnut Praline
  • Put sugar in a medium pan until caramelize, add hazelnut
  • Place it on top of parchment paper & allow cooling
  • Break into small pieces
  • Top each ramekin with hazelnut praline
  • Serve chilled
